Pork Chop Sheet Pan Family Dinner

Ingredients
  

  • 4 bone-in pork chops about 1 inch thick
  • 4 medium potatoes cut into 1-inch cubes
  • 3 large carrots peeled and cut into 1-inch pieces
  • 1 large onion cut into wedges
  • 3 tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or spray with cooking spray.
  2. In a large bowl, toss the potatoes, carrots, and onion with 2 tablespoons olive oil, 1 teaspoon Italian seasoning, salt, and pepper. Spread vegetables evenly on the baking sheet.
  3. Pat pork chops dry and rub both sides with remaining 1 tablespoon olive oil. Season with remaining Italian seasoning, garlic powder, paprika, salt, and pepper.
  4. Nestle the pork chops among the vegetables on the sheet pan. Bake for 25-30 minutes, or until pork chops reach an internal temperature of 145°F and vegetables are tender and golden.
  5. Let pork chops rest for 5 minutes before serving. Plate each pork chop with a generous helping of roasted vegetables and enjoy!
