Pizza-Flavored One-Pot Pasta Dinner

Who says you can't have pizza on a weeknight? This genius one-pot pasta brings all those beloved pizza flavors to your dinner table with way less effort than ordering delivery. Your kids will think it's the coolest thing ever, and you'll love that there's only one pot to clean!

Ingredients
  

  • 1 pound Italian sausage mild or spicy, casings removed
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 28-ounce can crushed tomatoes
  • 2 cups chicken or vegetable broth
  • 12 ounces penne or rigatoni pasta
  • 2 teaspoons Italian seasoning
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes optional
  • 1 cup sliced pepperoni
  • cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh basil for garnish

Method
 

  1. In a large pot or Dutch oven over medium-high heat, cook the Italian sausage, breaking it up with a wooden spoon, until browned and cooked through, about 5-7 minutes.
  2. Add the diced onion to the pot and cook until softened, about 3-4 minutes. Stir in the garlic and cook for another minute until fragrant.
  3. Pour in the crushed tomatoes and broth, then add the pasta, Italian seasoning, oregano, and red pepper flakes if using. Season with salt and pepper.
  4. Bring the mixture to a boil, then reduce heat to medium-low. Cover and simmer for 12-15 minutes, stirring occasionally, until the pasta is al dente and most of the liquid has been absorbed.
  5. Stir in half of the pepperoni slices, then sprinkle the mozzarella cheese evenly over the top. Arrange the remaining pepperoni slices on top.
  6. Cover the pot and let it sit for 3-4 minutes until the cheese melts completely. Sprinkle with Parmesan cheese and fresh basil before serving.
