- Whisk the soy sauce, ketchup, brown sugar, rice vinegar, and cornstarch with 2 tablespoons water in a bowl and set aside.
- Heat 1 tablespoon oil in a large skillet over medium-high and cook the chicken until cooked through, about 6 minutes. Remove.
- Add the remaining oil and both bell peppers and stir-fry 3 minutes.
- Add the pineapple chunks and cook 1 minute.
- Return the chicken, pour in the sauce, and toss until glossy and thick, about 2 minutes.
- Serve over rice.
Notes
If using canned pineapple, save a splash of the juice to stir into the sauce for extra tang.
