Instructions: 1 In a bowl, whisk together the soy sauce, pineapple juice, honey, olive oil, minced garlic, ground ginger, and black pepper to make the marinade.
Place the chicken pieces in a resealable plastic bag or a shallow dish. Pour half of the marinade over the chicken, reserving the other half for basting later.
Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Preheat your grill to medium-high heat. Lightly oil the grill grate.
Thread the marinated chicken pieces, fresh pineapple chunks, and bell pepper chunks onto the skewers, alternating between chicken, pineapple, and bell peppers.
Grill the kebabs for 10-15 minutes, turning occasionally and basting with the reserved marinade, until the chicken is cooked through and has nice grill marks.
Remove from the grill and let the kebabs rest for a few minutes before serving.
