Pineapple BBQ Meatballs

Chunks of fresh pineapple caramelize right in the sauce with these and it gives them a tropical sweetness that pairs perfectly with smoky BBQ. They're sticky, bright, and a little unexpected on an appetizer table. Everyone always asks what's in the sauce.

Ingredients
  

  • 2 lbs frozen fully cooked meatballs
  • 1 can 20 oz pineapple chunks, drained and juice reserved
  • 1 cup BBQ sauce
  • 2 tbsp brown sugar
  • 1 tbsp soy sauce
  • 1/2 tsp garlic powder
  • Sliced green onions for garnish

Method
 

  1. Add meatballs and drained pineapple chunks to the slow cooker.
  2. Whisk together BBQ sauce, 1/4 cup reserved pineapple juice, brown sugar, soy sauce, and garlic powder.
  3. Pour sauce over meatballs and pineapple and stir gently.
  4. Cook on low for 3-4 hours or high for 1.5-2 hours.
  5. Stir, garnish with green onions, and serve directly from the slow cooker.
