Pfeffernuesse Cookies

Cookies that have been spiced round and coated in a white sugar glaze that is crackly.

Ingredients
  

  • 2.5 cups flour
  • 1/2 cup molasses
  • 1/2 cup brown sugar
  • 1/3 cup butter melted
  • 1 egg
  • 1.5 tsp mixed spice
  • 1/4 tsp black pepper
  • 1 cup powdered sugar for glaze

Method
 

  1. Warm the molasses, brown sugar, and butter together, then cool slightly.
  2. Stir in the egg, then the flour, mixed spice, and black pepper to form a dough.
  3. Chill 30 minutes, then roll into small balls and place on a lined sheet.
  4. Bake at 350F for 10 to 12 minutes; cool completely.
  5. Whisk the powdered sugar with a little water and dip the tops, then let the glaze set.

Notes

The pinch of black pepper is what makes them authentic.
