Peppery Crab Cake Balls

Ingredients
  

  • 1 lb lump crab meat picked over for shells
  • 1 cup panko breadcrumbs divided
  • 1/2 cup mayonnaise
  • 2 large eggs beaten
  • 3 tablespoons minced red bell pepper
  • 2 tablespoons minced green onions
  • 1 tablespoon Dijon mustard
  • 2 teaspoons Old Bay seasoning
  • 1 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 2 tablespoons melted butter
  • Lemon wedges and remoulade sauce for serving

Method
 

  1. In a large bowl, combine crab meat, 1/2 cup panko breadcrumbs, mayonnaise, eggs, red bell pepper, green onions, Dijon mustard, Old Bay seasoning, black pepper, and cayenne pepper. Mix gently to avoid breaking up the crab too much.
  2. Form the mixture into 1½-inch balls (about 32 balls total). Place remaining 1/2 cup panko in a shallow dish and roll each ball to coat lightly.
  3. Heat a large skillet over medium-high heat. Working in batches, quickly sear the crab balls for about 1-2 minutes per side until golden (they don't need to be fully cooked, just lightly browned).
  4. Line your slow cooker with parchment paper. Arrange the seared crab balls in the slow cooker and drizzle with melted butter.
  5. Cover and cook on low for 2-3 hours until heated through. Switch to "warm" setting for serving. Serve with toothpicks, lemon wedges, and remoulade sauce for dipping.
