Peppermint Mocha Cookies

Rich espresso chocolate cookies with melting white chocolate and a refreshing touch of peppermint.

Ingredients
  

  • 0.75 cup butter softened
  • 1 cup brown sugar packed
  • 1 egg
  • 1 tbsp instant espresso
  • 0.5 tsp peppermint extract
  • 1.5 cups all-purpose flour
  • 0.5 cup cocoa powder
  • 0.75 cup white chocolate chips

Method
 

  1. Cream the butter and brown sugar until fluffy.
  2. Beat in the egg, espresso powder, and peppermint extract.
  3. Stir in the flour and cocoa until a soft dough forms.
  4. Fold in the white chocolate chips.
  5. Scoop onto lined sheets and bake at 350F for 10 to 12 minutes.
  6. Let them set on the pan a few minutes before transferring to cool.

Notes

Pull them while the centers still look soft for a chewy bite.
