Penne Arrabbiata

Arrabbiata is basically spicy marinara, and it comes together in the time it takes to boil pasta. It's one of those recipes that proves you don't need a lot of ingredients to make something that tastes like you actually tried. Great for nights when the pantry looks empty.

Ingredients
  

  • 1 lb penne pasta
  • 1 can 28 oz crushed tomatoes
  • 4 cloves garlic thinly sliced
  • 1/2 tsp red pepper flakes more to taste
  • 3 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley chopped, for serving
  • Parmesan cheese for serving

Method
 

  1. Cook penne according to package directions. Reserve 1/2 cup pasta water before draining.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes and cook, stirring, for 2 minutes until fragrant but not browned.
  3. Add crushed tomatoes, salt, and pepper. Simmer for 15 minutes until sauce thickens slightly.
  4. Add drained pasta to the sauce and toss to coat, adding pasta water as needed.
  5. Serve topped with fresh parsley and Parmesan.
