Peking Duck Wontons

Roasted duck shreds combined with hoisin and scallions are wrapped and crisped to perfection.

Servings: 20 wontons

Ingredients
  

  • 1.5 cups shredded cooked duck
  • 3 tbsp hoisin sauce
  • 2 green onions thinly sliced
  • 0.5 cucumber finely diced
  • 20 wonton wrappers
  • 4 cups vegetable oil for frying

Method
 

  1. Toss the duck with hoisin, green onions, and cucumber.
  2. Spoon filling into the center of each wrapper.
  3. Dampen edges and fold into triangles, pressing to seal.
  4. Heat oil to 350°F.
  5. Fry for 2 to 3 minutes until crisp and golden.
  6. Drain and serve with extra hoisin for dipping.

Notes

Rotisserie chicken works in a pinch if duck is hard to find.
