Pecan Snowball Cookies

Tender pecan shortbread balls, which are rolled in powdered sugar - and then rolled in powdered sugar one more time!

Total Time 35 minutes
Servings: 30 cookies

Ingredients
  

  • 1 cup unsalted butter softened
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 cup pecans finely chopped
  • 1 cup powdered sugar for rolling

Method
 

  1. Beat the butter and half cup of powdered sugar until creamy, then mix in the vanilla.
  2. Stir in the flour and chopped pecans until a soft dough comes together.
  3. Roll into one-inch balls and place on lined baking sheets.
  4. Bake at 350F for 14 to 15 minutes until the bottoms are just golden.
  5. Roll the warm cookies in powdered sugar, cool, then roll a second time for a snowy finish.

Notes

That second roll once they cool is what gives them the proper snowball look.
