Pecan Sandies Christmas Cookies

Ingredients
  

  • 1 cup 2 sticks unsalted butter, softened
  • 1/3 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 cup finely chopped pecans
  • 1/4 teaspoon salt
  • 1 cup powdered sugar for rolling

Method
 

  1. Preheat oven to 350°F and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3 minutes. Add vanilla extract and mix well.
  3. In a separate bowl, whisk together flour and salt. Gradually add to the butter mixture, mixing until just combined.
  4. Fold in the chopped pecans until evenly distributed throughout the dough.
  5. Roll dough into 1-inch balls and place 2 inches apart on prepared baking sheets.
  6. Bake for 10-12 minutes until cookies are set but not browned. They should be pale golden on the bottom.
  7. Let cookies cool on the baking sheet for 5 minutes, then while still warm, roll each cookie gently in powdered sugar to coat completely.
  8. Once cookies are completely cool, roll in powdered sugar a second time for that beautiful snowy finish. Store in an airtight container for up to a week.
