Servings: 20 cookies

Ingredients

  • 1/2 cup unsalted butter melted
  • 3/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/4 tsp baking soda
  • 1 cup pecans finely chopped

Method

  1. Whisk the melted butter and brown sugar until smooth, then beat in the egg and vanilla.
  2. Stir in the flour and baking soda to make a loose batter.
  3. Fold in the finely chopped pecans.
  4. Drop small teaspoons onto lined sheets, spacing well since they spread.
  5. Bake at 350F for 8 to 10 minutes until deeply golden and lacy at the edges.
  6. Cool completely on the pan so they crisp up before lifting off.

Notes

These spread a lot, so keep them small and well spaced.
