Pear Cranberry Cobbler

Ingredients
  

  • 5 medium pears peeled and sliced
  • 2 cups fresh or frozen cranberries
  • 1 cup granulated sugar divided
  • 1 tablespoon orange zest
  • 2 tablespoons orange juice
  • 3 tablespoons cornstarch
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup cold butter cubed
  • 3/4 cup whole milk
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F and butter a 9x13-inch baking dish.
  2. In a large bowl, toss together pears, cranberries, 3/4 cup sugar, orange zest, orange juice, and cornstarch. Transfer to prepared baking dish.
  3. In a medium bowl, whisk together flour, remaining 1/4 cup sugar, baking powder, salt, and cinnamon. Cut in cold butter until mixture resembles coarse meal.
  4. Stir in milk and vanilla extract until just combined. Drop large spoonfuls of batter evenly over the fruit mixture.
  5. Bake for 45-50 minutes until the topping is golden brown and the fruit filling is bubbling.
  6. Allow to cool for 10-15 minutes before serving.
