Method
- Whisk the peanut butter, soy sauce, honey, lime juice, ginger, and warm water together until smooth, then set aside.
- Heat 1 tablespoon oil in a large skillet over medium-high and cook the chicken until cooked through, about 6 minutes. Remove.
- Add the remaining oil, bell pepper, and carrots and stir-fry 3 minutes until crisp-tender.
- Return the chicken to the pan and pour in the peanut sauce.
- Toss until everything is coated and the sauce is warmed through, about 1 minute.
- Serve over rice or noodles with chopped peanuts on top.
Notes
If the sauce gets too thick, loosen it with a splash more warm water.
