Ingredients

  • 2 cups creamy peanut butter
  • 1 cup 2 sticks unsalted butter
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar sifted
  • 1/4 teaspoon salt

Method

  1. Line a 9x13-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal later.
  2. In a large microwave-safe bowl, combine the peanut butter and butter. Microwave on high for 2 minutes, then stir until completely smooth and combined.
  3. Add the vanilla extract and salt, stirring well to incorporate.
  4. Gradually add the powdered sugar, one cup at a time, stirring well after each addition until the mixture is smooth and creamy.
  5. Pour the fudge mixture into the prepared pan and spread evenly with a spatula. Smooth the top.
  6. Refrigerate for at least 2 hours until firm, then lift out using the parchment paper and cut into 1-inch squares.
  7. Store in an airtight container in the refrigerator for up to 2 weeks, or freeze for up to 3 months.
