Peanut Butter Banana Oat Bars

These chewy, easy bars are sweetened with banana and peanut butter, and are sliced perfectly for little hands!

Total Time 35 minutes
Servings: 12 bars

Ingredients
  

  • 2 cups rolled oats
  • 2 ripe bananas mashed
  • 1/2 cup peanut butter
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 cup chocolate chips

Method
 

  1. Preheat the oven to 350°F and line an 8x8 pan with parchment.
  2. Mash the bananas, then stir in peanut butter, honey and vanilla until smooth.
  3. Add the oats and cinnamon and mix until everything is coated.
  4. Fold in the chocolate chips and press the mixture firmly into the pan.
  5. Bake 25 minutes until the edges are golden and set.
  6. Cool completely before slicing into 12 bars.

Notes

Swap in sunflower seed butter for a nut-free, school-safe version.
