Ingredients
  

  • 3 medium zucchini cut into 3-inch sticks
  • 1 cup grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 2 tablespoons milk
  • Cooking spray
  • Marinara sauce for dipping

Method
 

  1. Preheat your oven to 425°F and line a large baking sheet with parchment paper, then spray lightly with cooking spray.
  2. Pat the zucchini sticks dry with paper towels to remove excess moisture (this helps them get extra crispy!).
  3. In a shallow bowl, whisk together the eggs and milk until well combined.
  4. In another shallow bowl, mix the Parmesan cheese, panko breadcrumbs, garlic powder, Italian seasoning, paprika, salt, and pepper.
  5. Dip each zucchini stick first into the egg mixture, letting the excess drip off.
  6. Then coat it thoroughly in the Parmesan mixture, pressing gently to help it stick.
  7. Place the coated zucchini sticks on the prepared baking sheet in a single layer, making sure they don't touch.
  8. Spray the tops lightly with cooking spray for extra crispiness.
  9. Bake for 20-25 minutes, flipping once halfway through, until golden brown and crispy.
  10. Serve immediately with warm marinara sauce for dipping and watch them disappear!
