Parmesan-Crusted Baked Meatballs

These have a crispy Parmesan crust on the outside and stay perfectly juicy inside — no frying required. They're the kind of meatball that works for a fancy spread or just Tuesday night snacking. Make a double batch because they go fast.

Ingredients
  

  • 1.5 lbs ground beef
  • 1/2 cup grated Parmesan plus 1/4 cup for topping
  • 1/3 cup Italian breadcrumbs
  • 2 cloves garlic minced
  • 1 egg
  • 2 tbsp whole milk
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • Marinara sauce for serving

Method
 

  1. Preheat oven to 425°F and drizzle a rimmed baking sheet with olive oil.
  2. Mix ground beef, 1/2 cup Parmesan, breadcrumbs, garlic, egg, milk, Italian seasoning, salt, and pepper together in a large bowl until just combined.
  3. Roll into 1.5-inch balls and place on the oiled baking sheet.
  4. Sprinkle the remaining Parmesan over the tops of the meatballs.
  5. Bake for 18-20 minutes until golden and cooked through.
  6. Serve with warm marinara for dipping.
