Parmesan-Crusted Baked Chicken Tenders

These are the tenders that your pickiest eater will actually eat, no negotiation required. The Parmesan adds flavor without being overwhelming and the dipping sauce takes maybe 30 seconds to make. Serve them with whatever the kids will eat on the side and call it a win.

Ingredients
  

  • 1.5 lbs chicken tenders
  • 1 cup panko breadcrumbs
  • 3/4 cup Parmesan cheese finely grated
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 2 eggs beaten
  • 1/2 cup mayonnaise
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard

Method
 

  1. Preheat oven to 425°F and place a wire rack on a parchment-lined baking sheet.
  2. Combine panko, Parmesan, garlic powder, oregano, and salt in a shallow dish.
  3. Dip each chicken tender in beaten egg and then press into the panko-Parmesan mixture to fully coat.
  4. Place coated tenders on the wire rack and bake for 18 to 20 minutes, flipping once, until golden and cooked through.
  5. Stir together mayonnaise, honey, and Dijon mustard in a small bowl for the dipping sauce.
  6. Serve tenders hot with the honey mustard sauce on the side.
