Panettone Bread Pudding

Vanilla custard soaked panettone makes a deliciously rich bread pudding.

Ingredients
  

  • 6 cups panettone cubed
  • 4 eggs
  • 2 cups whole milk
  • 0.5 cup heavy cream
  • 0.5 cup sugar
  • 2 tsp vanilla extract
  • 0.5 tsp ground cinnamon
  • 2 tbsp butter for greasing

Method
 

  1. Preheat the oven to 350 degrees F and butter a baking dish.
  2. Spread the panettone cubes evenly in the dish.
  3. Whisk together the eggs, milk, cream, sugar, vanilla, and cinnamon.
  4. Pour the custard over the panettone and press down gently, then let it soak 15 minutes.
  5. Bake 40 to 45 minutes, until puffed and set in the center with a golden top.
  6. Cool slightly and serve warm, dusted with powdered sugar.

Notes

Letting it soak before baking gives you that custardy, melt-in-your-mouth center.
