Panettone

A great option to pair with coffee is a panettone that is citrus like and airy with notes of candied raisins.

Ingredients
  

  • 3.5 cups bread flour
  • 1 packet instant yeast
  • 0.5 cup milk warm
  • 0.5 cup butter softened
  • 0.33 cup sugar
  • 3 eggs
  • 0.75 cup candied citrus peel
  • 0.5 cup raisins

Method
 

  1. Mix the flour, yeast, warm milk, sugar, and eggs into a sticky dough.
  2. Knead in the softened butter until the dough is smooth and elastic.
  3. Let it rise until doubled, about 2 hours.
  4. Fold in the candied peel and raisins, then place in a tall panettone mold.
  5. Let it rise again until puffed, about 1 hour.
  6. Bake at 350F for about 45 minutes until deep golden and hollow-sounding.

Notes

Hang it upside down to cool so the airy crumb doesn't collapse.
