Pancakes and Sausage Family Dinner

Who says pancakes are just for breakfast? This dinner flip on a classic morning favorite is sure to bring smiles to your dinner table! It's perfect for those busy weeknights when you need something quick, filling, and kid-approved. Plus, with just a few pantry staples, this meal comes together in under 30 minutes.

Ingredients
  

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 3 tablespoons melted butter or vegetable oil
  • 1 pound breakfast sausage links
  • Maple syrup for serving

Method
 

  1. Start cooking the sausage links in a large skillet over medium heat, turning occasionally until browned and cooked through, about 12-15 minutes.
  2. While sausages cook, whisk together flour, sugar, baking powder, and salt in a large bowl.
  3. In a separate bowl, beat eggs and then whisk in milk and melted butter.
  4. Pour wet ingredients into dry ingredients and stir until just combined (lumps are okay—don't overmix!).
  5. Heat a griddle or large non-stick pan over medium heat and lightly grease with butter or cooking spray.
  6. Pour 1/4 cup batter for each pancake and cook until bubbles form on the surface and edges look set, about 2-3 minutes. Flip and cook another 1-2 minutes until golden brown.
  7. Serve pancakes stacked high with sausage links on the side and plenty of maple syrup for drizzling!
