Pan-Seared Salmon with Dill Sauce

Golden darkened salmon fillets finished with a sour cream sauce enhanced with dill and citrus.

Ingredients
  

  • 4 salmon fillets skin on, about 6 oz each
  • 2 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 cup sour cream
  • 2 tbsp fresh dill chopped
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard

Method
 

  1. Pat the salmon dry and season both sides with salt and pepper.
  2. Heat the olive oil in a skillet over medium-high until shimmering.
  3. Place the salmon skin-side down and sear for 5 minutes without moving it, then flip and cook 3 to 4 minutes more.
  4. Stir together sour cream, dill, lemon juice, and Dijon in a small bowl.
  5. Plate the salmon and spoon the dill sauce alongside each fillet.

Notes

Letting the salmon sit undisturbed is the secret to that crisp golden crust.
