Paleo-Friendly Sweet Potato Brownies

Paleo brownies that use dates as a sweetener and are held together with sweet potato and coconut flour.

Ingredients
  

  • 1 cup mashed sweet potato
  • 1/2 cup pitted dates soaked and blended
  • 1/4 cup coconut flour
  • 1/3 cup cocoa powder
  • 2 eggs
  • 3 tbsp coconut oil melted
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 cup dairy-free chocolate chips

Method
 

  1. Preheat the oven to 350F and line an 8x8 pan with parchment.
  2. Blend the dates with the sweet potato, eggs, coconut oil, and vanilla until smooth.
  3. Stir in the coconut flour, cocoa, and baking soda and let the batter rest 5 minutes.
  4. Fold in the chocolate chips and spread evenly in the pan.
  5. Bake 28 to 32 minutes and cool completely before cutting.

Notes

Coconut flour soaks up liquid fast, so resting the batter keeps it from drying out.
