Outback Steakhouse Walkabout Soup Copycat Recipe

Ingredients
  

  • 4 large yellow onions thinly sliced
  • 4 tablespoons butter divided
  • 2 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup Monterey Jack or cheddar cheese shredded
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

  1. Melt 2 tablespoons of the butter in a heavy pot and cook the sliced onions low and slow for 20 to 45 minutes, until deeply caramelized.
  2. Add the remaining butter and stir in the flour to make a roux, cooking 1 to 2 minutes.
  3. Add the chicken broth gradually, whisking to prevent lumps, and simmer 10 minutes.
  4. Remove from high heat and stir in the heavy cream.
  5. Season, ladle into bowls and top with shredded cheese.

Notes

Walkabout Soup is closer to a creamy onion bisque than French onion - there is no melted cheese crouton on top. Caramelizing the onions is the critical step; 15 minutes gives you softened onions, not caramelized ones. Add the cream off high heat to avoid breaking. Yellow onions are standard, sweet onions mellow the bite. Broth quality matters, so use a good brand.
