Place Oreos in a food processor and pulse until they become fine crumbs. Alternatively, place cookies in a large zip-top bag and crush with a rolling pin.
In a large bowl, mix Oreo crumbs with softened cream cheese until well combined. The mixture should be moldable and hold together.
Roll the mixture into 1-inch balls (about 1 tablespoon each) and place on a parchment-lined baking sheet. Refrigerate for at least 30 minutes or freeze for 15 minutes until firm.
Melt chocolate candy coating according to package directions, stirring until smooth. If the coating is too thick, add 1 teaspoon of shortening to thin it out.
Using a fork or dipping tool, dip each chilled truffle into the melted chocolate, tapping off excess. Place back on the parchment-lined baking sheet.
Immediately top with sprinkles, crushed candy canes, or Oreo crumbs before the chocolate sets. Refrigerate for 15 minutes until chocolate is completely firm. Store in an airtight container in the refrigerator for up to 3 weeks.
