Orange-Glazed Duck Breast

Ingredients
  

  • 4 whole duck breasts
  • 1 cup orange juice
  • 1/4 cup honey
  • 2 tbsp soy sauce
  • 1 tbsp orange zest
  • 2 cloves garlic minced
  • 1 tsp salt
  • 1/2 tsp pepper

Method
 

  1. Score the duck skin in a crosshatch and season both sides with salt and pepper.
  2. Place the duck skin-side down in a cold skillet, then heat to medium and render the fat for 8 minutes until the skin is crisp.
  3. Flip and cook 4 more minutes, then remove the duck to rest.
  4. Pour off the fat and add the orange juice, honey, soy sauce, zest, and garlic to the pan, simmering into a glossy glaze.
  5. Slice the duck, spoon the orange glaze over the top, and serve.

Notes

Starting the duck in a cold pan renders the fat for the crispiest skin.
