Orange Chicken

Ingredients
  

  • 1 1/2 pounds boneless skinless chicken thighs cut into 1-inch pieces
  • 1/2 cup cornstarch
  • 3 tablespoons vegetable oil
  • 3/4 cup fresh orange juice
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 1 teaspoon sesame oil
  • Orange zest from 1 orange

Method
 

  1. Toss chicken pieces with 1/2 cup cornstarch in a bowl until evenly coated.
  2. Heat vegetable oil in a large skillet over medium-high heat and cook chicken in batches until golden brown and crispy, about 3-4 minutes per side, then transfer to a plate.
  3. In the same skillet, add garlic and ginger, cooking for 30 seconds until fragrant, then add orange juice, soy sauce, honey, rice vinegar, and orange zest.
  4. Bring sauce to a simmer, add the cornstarch slurry, and cook for 2-3 minutes until sauce thickens.
  5. Return chicken to the skillet, toss to coat in the sauce, drizzle with sesame oil, and cook for another 2 minutes until chicken is fully coated and heated through.
  6. Serve immediately over rice, garnished with green onions or sesame seeds if desired.
