- Heat the olive oil in a large pot over medium heat. Add the diced onion and bell pepper.
- Sauté until the vegetables are tender, about 5 minutes.
- Add the minced garlic and cook for another 1-2 minutes until fragrant.
- Add the uncooked rice to the pot and stir well to coat it with the oil and vegetables.
- Pour in the diced tomatoes (with their juice) and chicken or vegetable broth. Stir to combine.
- Add the smoked paprika, cumin, chili powder, salt, and pepper. Stir well to mix all the spices.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 18-20 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from heat and let the pot sit, covered, for an additional 5 minutes to allow the flavors to meld.
- Fluff the rice with a fork and, if desired, garnish with chopped cilantro and lime wedges before serving.
- Serve warm and enjoy your delicious one-pot Spanish rice!
