One-Pot Pasta Family Dinner Under $10

Ingredients
  

  • 1 pound Italian sausage mild or spicy, casings removed
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 can 14.5 oz diced tomatoes
  • 3 cups chicken broth
  • 12 oz penne pasta
  • 1 teaspoon Italian seasoning
  • 2 cups fresh spinach
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste

Method
 

  1. In a large pot or Dutch oven over medium-high heat, cook the Italian sausage, breaking it up with a wooden spoon until browned, about 5-7 minutes.
  2. Add the diced onion and cook for 3 minutes until softened. Stir in the garlic and cook for 30 seconds until fragrant.
  3. Pour in the diced tomatoes (with juices), chicken broth, and Italian seasoning. Bring to a boil.
  4. Add the pasta, stir well, and reduce heat to medium. Cover and cook for 12-15 minutes, stirring occasionally, until pasta is tender.
  5. Stir in the fresh spinach and cook for 1-2 minutes until wilted.
  6. Remove from heat and stir in Parmesan cheese. Season with salt and pepper to taste. Serve immediately with extra Parmesan if desired.
