One-Pot Pasta

Pasta is simmered in a sauce of garlic and tomatoes, so it really soaks up the flavor!

Servings: 2 servings

Ingredients
  

  • 8 oz spaghetti
  • 2 cups cherry tomatoes halved
  • 3 cloves garlic sliced
  • 2 cups vegetable broth
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 0.25 cup Parmesan cheese grated

Method
 

  1. Add the spaghetti, tomatoes, garlic, broth, olive oil, and basil to a single pot.
  2. Bring everything to a boil over medium-high heat.
  3. Simmer uncovered for about 12 minutes, stirring often, until the pasta is tender.
  4. Most of the liquid should reduce into a light sauce.
  5. Stir in the Parmesan and a splash more broth if needed.
  6. Serve straight from the pot with extra cheese on top.

Notes

Stir frequently so the pasta doesn't stick to the bottom.
