Method
- Heat the olive oil in a large pot or Dutch oven over medium-high heat.
- Season the chicken breasts with salt and black pepper. Add them to the pot and cook until browned on both sides, about 4-5 minutes per side.
- Remove chicken from the pot and set aside.
- In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent and fragrant, about 3-4 minutes.
- Stir in the rice and cook for about 1-2 minutes, allowing it to slightly toast.
- Pour in the chicken broth, lemon juice, lemon zest, and dried thyme. Stir to combine.
- Return the chicken breasts to the pot, nestling them into the rice mixture.
- Bring to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the rice is tender and the chicken is cooked through.
- Remove from heat and let it sit, covered, for an additional 5 minutes.
- Garnish with fresh parsley before serving.
Notes
You can add veggies like peas or spinach during the last 5 minutes of cooking for extra nutrients. This dish is also great for meal prep; it reheats well for lunch the next day. For an extra burst of flavor, drizzle some additional lemon juice over the top before serving.
