One-Pot Chicken and Rice

Ingredients
  

  • 1 1/2 pounds boneless skinless chicken breasts cubed
  • 1 1/2 cups long-grain white rice
  • 3 cups chicken broth
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 cup frozen peas and carrots
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Method
 

  1. Heat the olive oil in a large pot and brown the cubed chicken, then set it aside.
  2. Add the onion and garlic and cook until softened.
  3. Stir in the rice and paprika, then add the chicken broth and return the chicken to the pot.
  4. Bring to a simmer, cover and cook on low for 18 to 20 minutes without stirring.
  5. Add the frozen peas and carrots in the last 5 minutes, then fluff and season before serving.

Notes

Add the frozen vegetables late so they do not overcook and turn to mush. Avoid stirring the rice once the liquid is in or it goes gummy instead of fluffy. Smoked paprika gives a deeper flavor if you want it.
