One-Pot Cajun Chicken Pasta

The pasta absorbs all the smoky cajun goodness while you do very little work because everything cooks in the same skillet.

Ingredients
  

  • 1 lb chicken breast diced
  • 2 tbsp Cajun seasoning
  • 12 oz rotini
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup diced tomatoes
  • 2 tbsp olive oil
  • 0.75 cup Parmesan grated

Method
 

  1. Season the diced chicken with Cajun seasoning.
  2. Brown the chicken in olive oil in a large deep skillet over medium-high heat.
  3. Add the broth, cream, tomatoes, and dry rotini, then stir well.
  4. Bring to a boil, then cover and simmer 12-15 minutes, stirring occasionally, until the pasta is tender.
  5. Uncover, stir in the Parmesan, and let it sit a few minutes to thicken before serving.

Notes

If the sauce looks soupy, simmer uncovered an extra minute or two.
