Old-Fashioned Molasses Cookies

Ingredients
  

  • 2 1/4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter softened
  • 1 cup packed brown sugar
  • 1 large egg
  • 1/4 cup dark molasses
  • 1/2 cup granulated sugar for rolling

Method
 

  1. Preheat oven to 375°F and line baking sheets with parchment paper.
  2. Whisk together flour, baking soda, cinnamon, ginger, cloves, and salt in a medium bowl.
  3. Beat butter and brown sugar together until fluffy, about 2 minutes, then add egg and molasses and beat until smooth.
  4. Gradually stir the dry ingredients into the wet ingredients until just combined and no flour streaks remain.
  5. Roll dough into 1-inch balls, roll each ball generously in granulated sugar, and place 2 inches apart on prepared baking sheets.
  6. Bake for 10-12 minutes until edges are set but centers still look soft and puffy, then cool on baking sheet for 3 minutes before transferring to a wire rack.
