Preheat your oven to 375°F. Line a 9-inch pie pan with the bottom crust and set aside.
In a large bowl, combine the diced apples, raisins, currants, candied citron, brown sugar, cinnamon, nutmeg, and cloves. Mix everything together well.
Add the apple cider (or brandy) and melted butter to the fruit mixture. Stir until all ingredients are thoroughly combined and the fruit is well coated.
Pour the mincemeat filling into the prepared pie crust, spreading it evenly.
Place the top crust over the filling. Trim excess dough, crimp the edges to seal, and cut several small slits in the top to allow steam to escape. Brush the top with beaten egg for a beautiful golden finish.
Bake for 45-50 minutes, until the crust is golden brown and the filling is bubbling through the slits. If the edges brown too quickly, cover them with foil.
Let the pie cool for at least 30 minutes before slicing. This pie is delicious served warm or at room temperature!
