Okonomiyaki

An airy, grilled pancake bursting with cabbage and pork and topped with sauce and mayo.

Ingredients
  

  • 1 cup flour
  • 2 eggs
  • 3/4 cup dashi broth
  • 3 cups cabbage shredded
  • 6 slices pork belly
  • 3 tbsp okonomiyaki sauce
  • 2 tbsp mayonnaise
  • 2 tbsp bonito flakes

Method
 

  1. Whisk the flour, eggs, and dashi into a batter, then fold in the shredded cabbage.
  2. Pour the batter into a hot oiled skillet and shape into a thick round.
  3. Lay pork belly slices over the top and cook until the bottom is golden.
  4. Flip carefully and cook until the pork crisps and the pancake is cooked through.
  5. Top with okonomiyaki sauce, mayo, and bonito flakes.

Notes

Pack in lots of cabbage; it's what keeps the pancake light and fluffy.
