No-Bake Toffee Cheesecake

A cool fluffy cheesecake that does not need to be baked and has toffee bits mixed into it on top of a chocolate cookie crust.

Servings: 10 slices

Ingredients
  

  • 2 cups chocolate cookie crumbs
  • 6 tbsp butter melted
  • 16 oz cream cheese softened
  • 1 cup powdered sugar
  • 1.5 cups heavy cream whipped
  • 1 tsp vanilla extract
  • 1 cup toffee bits

Method
 

  1. Stir cookie crumbs with melted butter and press firmly into a springform pan.
  2. Beat cream cheese and powdered sugar until smooth and creamy.
  3. Whip the heavy cream to stiff peaks in a separate bowl.
  4. Fold the whipped cream and toffee bits into the cream cheese mixture.
  5. Spread over the crust and smooth the top.
  6. Chill at least 4 hours, or overnight, until firm enough to slice.

Notes

No bake means it stays soft, so keep it cold right up until serving.
