No-Bake Protein Balls

A printable version of no-bake protein balls.
Prep Time 15 minutes
Cooling, chilling or freezing 30 minutes
Total Time 45 minutes
Servings: 14 servings

Ingredients

  • 1/2 cup natural peanut butter, stirred smooth
  • 1/2 cup vanilla protein powder
  • 2 tablespoons ground flaxseed
  • 2 tablespoons powdered erythritol
  • 1 teaspoon vanilla extract
  • 1/4 cup sugar-free chocolate chips
  • 2 tablespoons unsweetened almond milk, as needed

Method

  1. Let ½ cup of natural peanut butter (or almond butter) come to room temperature for easier mixing.
  2. In a large bowl, combine the peanut butter with ½ cup of vanilla protein powder, 2 tablespoons of ground flaxseed, 2 tablespoons of erythritol, and 1 teaspoon of vanilla extract.
  3. Mix with a spoon or your hands until everything is well combined and holds together when pressed.
  4. Fold in ¼ cup of sugar-free chocolate chips.
  5. If crumbly, add almond milk 1 teaspoon at a time, up to 2 tablespoons, until rollable. Let stand 5 minutes so flax hydrates before adding more.
  6. Divide into 14 balls, approximately 1 1/4 inches each.
  7. Place on a parchment-lined plate or baking sheet.
  8. Refrigerate for at least 30 minutes to firm up.
  9. Refrigerate airtight for up to 4 days, or freeze for longer storage.
  10. Enjoy straight from the fridge as a quick snack or dessert.

Use the named sweetener form and amount; concentrated drops or pure monk fruit are not equivalent to a spoon-for-spoon granulated blend. Nutrition has not been calculated.
Protein powders absorb different amounts of moisture; adjust slowly.
