No-Bake Peanut Butter Oat Bars

Ingredients
  

  • 2 cups rolled oats
  • 1 cup creamy peanut butter
  • 1/2 cup honey
  • 1/2 cup mini chocolate chips
  • 1 teaspoon vanilla extract

Method
 

  1. In a large mixing bowl, combine the rolled oats and mini chocolate chips.
  2. In a microwave-safe bowl, add the creamy peanut butter and honey. Microwave in 30-second intervals, stirring in between, until the mixture is smooth and melted.
  3. Stir in the vanilla extract into the melted peanut butter and honey mixture.
  4. Pour the peanut butter mixture over the oats and chocolate chips. Mix thoroughly until everything is well combined.
  5. Line an 8x8 inch baking dish with parchment paper. Press the mixture firmly into the dish, making sure it's evenly distributed.
  6. Refrigerate for at least 2 hours, or until the bars are firm and set.
  7. Once set, lift the parchment paper out of the dish and cut into bars.
  8. Store the bars in an airtight container in the refrigerator for up to a week.

Notes

Feel free to add extras like chopped nuts, dried fruit, or a sprinkle of sea salt for added flavor and texture. You can substitute almond butter or sunflower seed butter if you prefer. These bars are perfect for lunchboxes, after-school snacks, or a quick breakfast option.
