- In a large mixing bowl, combine the rolled oats and mini chocolate chips.
- In a microwave-safe bowl, add the creamy peanut butter and honey. Microwave in 30-second intervals, stirring in between, until the mixture is smooth and melted.
- Stir in the vanilla extract into the melted peanut butter and honey mixture.
- Pour the peanut butter mixture over the oats and chocolate chips. Mix thoroughly until everything is well combined.
- Line an 8x8 inch baking dish with parchment paper. Press the mixture firmly into the dish, making sure it's evenly distributed.
- Refrigerate for at least 2 hours, or until the bars are firm and set.
- Once set, lift the parchment paper out of the dish and cut into bars.
- Store the bars in an airtight container in the refrigerator for up to a week.
Notes
Feel free to add extras like chopped nuts, dried fruit, or a sprinkle of sea salt for added flavor and texture. You can substitute almond butter or sunflower seed butter if you prefer. These bars are perfect for lunchboxes, after-school snacks, or a quick breakfast option.
