New Year's Morning Coffee Cake

This is one of those bake-once, eat-all-day kind of things. The brown sugar streusel on top is what makes it. It comes together in about 20 minutes prep and you can absolutely make it the day before and keep it covered on the counter.

Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 2 large eggs
  • 1 cup sour cream
  • 1/2 cup unsalted butter melted
  • 1 tsp vanilla extract
  • 3/4 cup packed brown sugar for streusel
  • 1/3 cup all-purpose flour for streusel
  • 4 tbsp cold butter cubed (for streusel)
  • 1 tsp cinnamon for streusel

Method
 

  1. Preheat oven to 350°F. Grease a 9x13 baking pan.
  2. Make streusel: mix brown sugar, flour, and cinnamon. Cut in cold butter until crumbly. Set aside.
  3. Whisk flour, sugar, baking powder, salt, and cinnamon in a large bowl.
  4. In a separate bowl, whisk eggs, sour cream, melted butter, and vanilla. Fold into dry ingredients until just combined.
  5. Spread batter into the prepared pan. Sprinkle streusel evenly over the top.
  6. Bake for 30 to 35 minutes until a toothpick comes out clean. Cool before cutting into squares.
