New Orleans Cajun Chicken Pasta

Creamy Cajun chicken and pasta from the French Quarter has a rich, soulful foundation built upon brown bell pepper, celery, and onion.

Ingredients
  

  • 1 lb chicken breast sliced
  • 2 tbsp Cajun seasoning
  • 12 oz bowtie pasta
  • 1 green bell pepper diced
  • 2 stalks celery diced
  • 1 onion diced
  • 1.25 cups heavy cream
  • 0.5 cup Parmesan grated
  • 2 tbsp olive oil

Method
 

  1. Coat the chicken in Cajun seasoning and sear in olive oil over medium-high until cooked through; set aside.
  2. In the same pan, saute the bell pepper, celery, and onion until softened, about 6 minutes.
  3. Cook the bowtie pasta in salted water until al dente and drain.
  4. Pour the cream into the veggies and simmer 4 minutes, then stir in the Parmesan.
  5. Return the chicken and add the pasta, tossing everything together until coated.

Notes

A pinch of smoked paprika deepens that New Orleans flavor even more.
