Ingredients

  • 8 pieces chicken bone-in
  • 2 cups buttermilk
  • 3 cups all-purpose flour
  • 3 tbsp cayenne pepper
  • 2 tbsp brown sugar
  • 1/2 cup frying oil reserved
  • 4 cups vegetable oil for frying

Method

  1. Soak the chicken in buttermilk for 1 hour, then dredge in seasoned flour.
  2. Heat the oil to 350F and fry the chicken 12 to 15 minutes until golden and cooked through.
  3. Whisk the cayenne and brown sugar into 1/2 cup of the hot frying oil to make the hot oil.
  4. Brush the fiery oil generously over the fried chicken.
  5. Serve on white bread with pickle slices.

Notes

Start with less cayenne if your crowd is heat-shy, then build up.
