Mussels in White Wine Sauce

Mussels steamed in a broth made of garlic, white wine, and butter.

Ingredients
  

  • 2 lb mussels scrubbed
  • 3 tbsp butter
  • 4 cloves garlic minced
  • 1 shallot minced
  • 1 cup dry white wine
  • 1/4 cup parsley chopped
  • 1 baguette for serving

Method
 

  1. Melt the butter and soften the shallot and garlic.
  2. Pour in the white wine and bring to a simmer.
  3. Add the mussels and cover the pot.
  4. Steam 5 to 7 minutes until the shells open.
  5. Discard any mussels that stay closed.
  6. Sprinkle with parsley and serve with crusty bread for the broth.

Notes

Toss any mussels that do not open after cooking.
