Mozzarella-Stuffed Beef Meatballs

Cut one of these open and there's melted mozzarella inside — it's the kind of moment that gets people talking. Yes, they take a little more effort to assemble, but you can stuff and freeze them ahead of time. Bake them off the day of and watch the platter clear.

Ingredients
  

  • 1.5 lbs ground beef 80/20
  • 1/2 cup Italian breadcrumbs
  • 1/4 cup grated Parmesan
  • 1 egg
  • 2 cloves garlic minced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 12 small mozzarella balls ciliegine
  • 1 cup marinara sauce for serving

Method
 

  1. Preheat oven to 400°F and line a baking sheet with foil.
  2. Mix ground beef, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper together in a large bowl.
  3. Divide meat mixture into 12 equal portions, flatten each into a small patty, place a mozzarella ball in the center, and seal the meat around it forming a ball.
  4. Place meatballs on the prepared baking sheet and bake for 18-22 minutes until cooked through.
  5. Serve immediately with warm marinara sauce for dipping.
