Miso Soup with Tofu and Seaweed

Ingredients
  

  • 4 cups water
  • 3 tbsp white miso paste
  • 1 tsp dashi granules
  • 7 oz silken tofu cubed
  • 2 tbsp dried wakame seaweed
  • 2 stalks green onion sliced

Method
 

  1. Bring the water to a gentle simmer and stir in the dashi granules.
  2. Soak the wakame in a little water for 5 minutes, then drain.
  3. Whisk the miso paste with a ladle of the hot broth until smooth, then stir it back in.
  4. Add the tofu and wakame and heat gently without boiling.
  5. Top with sliced green onion just before serving.

Notes

Never boil after adding the miso or it loses its delicate flavor.
