Mirchi Bajji

Mild chilies that have been stuffed and then fried in a spiced chickpea batter.

Ingredients
  

  • 8 large mild chilies
  • 1 cup chickpea flour
  • 1 tsp carom seeds
  • 1 tsp red chili powder
  • 0.5 tsp baking soda
  • 1 tbsp tamarind paste
  • 3 cups oil for frying

Method
 

  1. Slit the chilies lengthwise and remove the seeds.
  2. Mix a small filling of tamarind paste and a pinch of spices and stuff the chilies.
  3. Make a batter from chickpea flour, carom seeds, chili powder, baking soda, and water.
  4. Dip each chili in the batter to coat fully.
  5. Deep-fry until golden and crisp, then drain.

Notes

Use mild banana peppers if you want less heat for the crowd.
