Mint Chocolate Chip Brownies

These chocolate brownies have a silky mint layer and shiny chocolate topping.

Ingredients
  

  • 0.5 cup melted butter
  • 1 cup sugar
  • 2 eggs
  • 0.75 cup flour
  • 0.5 cup cocoa powder
  • 1 cup powdered sugar
  • 0.5 tsp peppermint extract
  • 0.5 cup chocolate chips
  • 3 tbsp butter softened, for mint frosting
  • 2 tbsp milk for mint frosting

Method
 

  1. Preheat the oven to 350°F and line an 8-inch square pan with parchment. Whisk the melted butter, sugar, and eggs, then stir in the flour and cocoa. Spread in the pan and bake for 25 to 28 minutes, then cool completely.
  2. Beat the powdered sugar with the softened butter, milk, and peppermint extract into a smooth mint frosting.
  3. Spread the mint layer evenly over the cooled brownies.
  4. Melt the chocolate chips and pour over the mint layer.
  5. Chill until the chocolate top is set.
  6. Slice into neat squares.

Notes

A drop of green food coloring in the mint layer makes them extra festive.
