Ingredients
  

  • 24 plain baked mini vanilla cupcakes fully cooled, about 1 1/2 inches wide
  • 1 1/2 cups vanilla buttercream frosting
  • 24 small strawberries hulled and dried
  • 24 mini marshmallows
  • 48 mini chocolate chips
  • 24 small red candy decorations

Method
 

  1. Spread a thin layer of frosting on each cupcake. Stand a strawberry, cut-side down, toward the back as a hat.
  2. Use frosting to attach a marshmallow to each strawberry tip. Pipe a band around the strawberry base and a beard on the front of the cupcake.
  3. Place two chocolate chips as eyes and a red candy nose on the visible frosting. Refrigerate until serving.

Notes

Equipment: piping bag.
Serving size: 1 mini cupcake.
Keep refrigerated until serving. Return to the refrigerator within 2 hours; use within 3–4 days.
This decorating recipe starts with baked mini cupcakes; baking time is not included. Decorate on the day of serving for best berry texture.
